Back fish with leek vegetables

0,25 l Milk
2 Eggs

300 g Leek
20 g Butter
0,125 l Vegetable broth
3 tbsp Cream
White Pepper
300 g Saithe Filet
1 tsp Lemon juice

For baking fish with leek vegetables, saithe fillet is fried in baking dough. For the Aus baking dough from baked fish 125 g flour with 1/8 L milk smooth stir. Separate the eggs in two bowls. Stir the egg yolk into the dough, season with salt and leave to swell for approx. 15 minutes. For the leek, cut the leek into rings and sauté in butter until soft. Sprinkle the rest of the flour over the leek vegetables, sweat lightly and deglaze with 1/8 litre milk. Stir in vegetable stock and round off with cream. Season the leek vegetables with white pepper and salt. Preheat frying fat to 175° in the deep fryer. Beat the egg whites until stiff and fold loosely into the Aus Back dough. Sprinkle salmon fillet with lemon juice, season with pepper and salt and turn in off baking dough. Bake the fish for approx. 4-5 minutes until golden brown and drain on kitchen paper. Serve baked fish with leek vegetables. It goes well with French fries.
