Wholemeal spaghetti with mushrooms

Wholemeal spaghetti with mushrooms are served in a cream sauce, which acquires a particularly intense mushroom aroma through preparation with dried mushrooms. First soak dried mushrooms in approx. 1/8 litre hot water. Meanwhile, clean the fresh mushrooms and cut them into slices. Cut a mild white onion and garlic cloves into fine cubes. Heat corn oil in a pan and sauté the mushrooms vigorously. Add onions and garlic cloves, fry lightly and deglaze with vegetable stock. Season the mushrooms with ground pepper, salt and thyme. Add soaked mushrooms together with the mushroom soaking water and let simmer. Stir the starch flour with a little cold water until smooth and bind the mushrooms lightly with it. Stir in cream fraiche. Cook wholemeal spaghetti in boiling salted water for about 9 minutes until al dente, pour into a sieve and drain. Mix wholemeal spaghetti with mushrooms in the pan and serve with grated cheese as desired.
