Whole grain noodle dough
Quantity Ingredient
100 g Wheat wholemeal flour
100 g Flour Type 405
2 Eggs
1 tbsp Olive Oil
1 tbsp Water

For the wholemeal noodle dough mix wheat wholemeal flour with flour type 405. Add medium sized eggs, olive oil and water and knead with the dough hooks of the hand mixer until the flour is well moistened. Then knead the wholemeal noodle dough by hand for about 5 minutes until it begins to shine. Wrap the whole grain noodle dough in cling film so that it does not dry out and let it rest at room temperature for about 30 minutes. Then you can roll out the wholemeal pasta dough by hand on a lightly floured work surface or with the pasta machine approx. 2-3 mm thin. In between, sprinkle the wholemeal noodle dough again and again with some flour. Cut the rolled out wholemeal noodle dough into any shape or shape. Fresh wholemeal pasta dough needs only about 2 minutes to be cooked in salted water.
