Paprika Couscous Salad

Paprika Couscous Salad is a small side salad that tastes piquant and goes very well with grilled steak or chicken. For the paprika couscous salad, first finely dice the shallots and fry them in sunflower oil until translucent. Add the couscous, fry lightly and deglaze with water. Add salt and bring the couscous to the boil while stirring. Remove the pot from the heat and stir in the paprika puree or tomato puree. Leave the couscous to swell for approx. 5-10 minutes, pour into a salad bowl and season with Harissa or alternatively hot Ajvar. Drain the grilled paprika from the glass, cut into small cubes and add to the couscous. Finely chop the parsley, sprinkle over the paprika couscous salad and mix well. Decorate the paprika couscous salad with fresh parsley as desired.
