Calamari with shepherd salad

For calamari with shepherd salad inks fish rings without breading are used, because they are fried only briefly in oil and thus taste more aromatic and become more tender. For the marinade of the shepherd salad mix 1 tablespoon oil with lemon juice and season with pepper, salt and a pressed garlic clove. Cut the onion into fine rings and place in the marinade until tender. Halve the cucumber lengthwise and cut into slices. Quarter the tomatoes and cut the peppers into rings. Mix the salad with the onions and fold in the peppers, olives and diced sheep cheese. Cut the parsley into strips and sprinkle over the shepherd's salad. For the calamari, heat 5 tablespoons of oil in a pan. Halve 2 garlic cloves lengthwise and add to the oil. When the garlic cloves brown, the oil has the right temperature. Remove garlic. Season inks fish rings with salt, turn in flour and fry briefly in oil until golden brown. Serve calamari with shepherd salad and lemon slices.
