90 g Appenzell cheese
0,1 l Milk

These cheese rolls are baked with a very simple shortcrust pastry and can be prepared quickly. The cheese rolls taste especially crispy when freshly baked. First preheat the oven to 220° and cover a baking tray with baking paper. For the shortcrust pastry season flour with baking powder and a pinch of salt. Cut the cold butter into pieces and knead them by hand with the flour. The short pastry becomes crumbly at first. Grate Appenzeller cheese or another spicy cheese coarsely and mix with the dough. Then add the milk and knead the dough until smooth. Form the shortcrust pastry into a ball, place on the baking tray and press flat. The diameter should be about 14 cm and the edge about 2-3 cm high. Cut the shortcrust pastry like a cake into 8 triangles. Brush the cheese rolls with milk and put them on the baking tray with some distance between them. The cheese rolls rise strongly during baking, as can be seen in the picture above. Place the baking tray on the middle shelf in the preheated oven and bake the cheese rolls for approx. 12-15 minutes, depending on the degree of browning desired. Place cheese rolls on a cake rack to cool.
