For the bacon sauce first cut the marbled bacon and onions into small cubes. Put the bacon in a hot pan and sear vigorously. Set the temperature to medium. Add the onions and brown them lightly while stirring, but do not let them get too dark. Otherwise the onions taste bitter. Dust flour over bacon and onions and stir until a flour sweats. Add cold water while stirring and let the bacon sauce simmer for 15 to 20 minutes. The sauce becomes brownish and creamy. Season the bacon sauce with salt and pepper just before serving, as the bacon still adds salt to the sauce.
