Leek Potato Gratin

This leek potato gratin is served as a light garnish to short roasted meat, poultry or fish. For the leek potato gratin, first preheat the oven to 180° and spread a casserole dish or quiche dish with a little butter. Clean the leek and cut into very fine rings. Peel, wash and slice firmly boiling potatoes into very thin slices or plane them. First place a layer of potatoes in the casserole dish and season with ground pepper, salt and a pinch of finely grated nutmeg. Spread the leek over the potatoes and cover with the remaining potatoes. Season the potatoes once more with light spices. Pour the vegetable broth over the leek potato gratin and bake on the middle shelf for about 30 minutes. Remove the leek potato gratin from the oven. Set the grill level in the oven to the highest level. Whip the cream until semi-solid and spread over the leek potato gratin. Place the leek potato gratin on the top rail under the grill and gratinate for approx. 1 minute.
