Apricot dumplings made from potato dough

Apricot dumplings made from potato dough can be prepared out of season with dried apricots. Put the dried apricots in a pot, cover lightly with water and add 2 tablespoons of sugar. Bring the water to the boil, remove the pot from the heat and leave the dried apricots to swell for at least 1 hour, preferably overnight. For the apricot dumplings made of potato dough, peel floury potatoes, cut into cubes and cook as salt potatoes in approx. 15 minutes. Drain the boiling water and let the potatoes cool down. Mash the potatoes finely with a potato masher, but do not purée. Knead an egg yolk and flour under the potatoes and roll 9 small apricot dumplings out of the potato dough with lightly floured hands. Drain the apricots very well and fill each with 1 piece of sugar cube. Press the apricot dumplings flat, cover each with an apricot and put the potato dough back around the apricots. Bring plenty of water to the boil. Switch back the temperature. Place the apricot dumplings made of potato dough in the boiling water and let simmer for about 10 minutes. When they surface, the apricot dumplings are cooked. In a frying pan let out butter and roast breadcrumbs until golden brown. Sway apricot dumplings made of potato dough in the pan until they are covered with breadcrumbs, as shown in the picture above. Sprinkle apricot dumplings made of potato dough with icing sugar shortly before serving.
