200 g Beef minced meat
Pepper & Salt
1 tbsp Breadcrumbs flour
0,5 White Onion
0,5 Chilli pod
1 tbsp Olive Oil
5 tbsp Broth
5 tbsp Red wine

Albondigas are served in Spain as tapas hot or cold with a glass of red wine. Albondigas are small spicy minced balls that are best served in small clay bowls with small wooden skewers. For the albondigas, first season beef minced meat with pepper & salt and pressed garlic. Roll small albondigas with slightly moistened hands, as can be seen in the picture above. Turn the albondigas into breadcrumbs and flour. Peel half a mild white onion and cut into fine cubes. Cut half a red chilli pod into rings and remove the very hot white seeds. Heat olive oil in a frying pan and fry the albondigas well all around. Switch the temperature back to the middle level. Add onions and chilli pepper and fry lightly. Deglaze albondigas with broth and flavour with red wine. Cook the sauce until slightly thick. Albondigas are best served with Spanish red wine.
