Bacon Potato Salad with fried herring is a hearty dish that gets its special aroma from the crispy fried bacon. By using fat bacon, no extra oil is needed for the marinade of bacon potato salad. Boil waxy potatoes as a coat of potatoes. Cut the white bacon into cubes and fry until golden brown. Add finely diced onions and fry until translucent. Fill the onion bacon mixture into a salad bowl and mix with herb vinegar and mustard. Peel the potatoes while still warm and plane into fine slices. Add the potatoes to the marinade and pour over the hot vegetable stock. Mix the bacon, potato salad and season with ground pepper and salt. Bacon potato salad well let infuse. Cut the chives into small rolls. Let the herring drip off well. Bacon potato salad with fried herring on plates and sprinkle with chives.
