Grater cake with salmon

Grated cakes with salmon are served with a creamy horseradish sauce. Per serving I served three grater cakes with salmon. For the grater cake peel a waxy variety of potatoes and an onion. Grate the potatoes and onion finely with a food processor, put them into a gauze cloth or tea towel and squeeze them out by twisting the ends together until no more water runs out. Mix potatoes and onions with two medium sized eggs and flour and season with salt. Preheat the oven to 50° to keep it warm. Heat corn oil in portions in a coated pan and do not bake more than three grater cakes at a time. For each grater cake add 1 tablespoon potato mixture to the pan, spread thinly and bake until the edge begins to brown. Turn grater cake over and tan lightly from the other side, as shown in the picture above. Warm the finished grater cake. For the horseradish sauce season sour cream with horseradish cream, lemon juice, white pepper and salt. Serve grated cakes with salmon and horseradish sauce on plates and decorate with dill.
