This zucchini salad is particularly suitable as a side dish with grilled meat or poultry. For the salad, cut a zucchini into thin slices. Heat 1 tablespoon of olive oil in a pan. Fry the zucchini in it until they start to brown. Season with ground pepper and salt. Let the zucchini cool down. For the salad marinade, mix 1 tablespoon of olive oil with white balsamic vinegar. Season with ground pepper, salt and pressed garlic. Finely chop the parsley. Sprinkle into the salad marinade. Rinse the corn. Drain. Cut the vegetables and onion into quarters. Cut into fine slices. Cut tomato into small cubes. Mix zucchini into the salad marinade. Mix in corn, vegetables, onion and tomatoes.
