Asparagus starter

250 g Asparagus
0,25 tsp Salt
0,5 tsp Sugar
10 g Butter
150 g Salmon ham
2 tbsp Caesar dressing
Pepper from the mill
2 Thyme Branches

This asparagus starter is served with tender salmon ham and spicy Caesar dressing. The asparagus starter can be prepared very easily and quickly, even in large quantities, because the asparagus can be pre-cooked in good time. Peel the asparagus and cut off any woody ends. Bring water to the boil in a wide flat pan, add salt, sugar, butter and asparagus and, depending on the thickness of the stalks, cook the asparagus for about 8-10 minutes until it is not too soft. Remove the asparagus from the water with a skimmer, place on a flat plate and allow to cool. For the asparagus starter, wrap two thin slices of salmon ham around each asparagus stalk and cut into bite-sized pieces with a sharp chef's knife, as shown in the picture above. Sprinkle Caesar dressing over the asparagus and season with freshly ground pepper. Use fresh thyme twigs or other seasonal herbs to decorate the asparagus starter.
