Pork tenderloin succeeds simply and becomes particularly tender and juicy, if it is baked after the browning in the oven briefly further. Pork fillet is particularly suitable as a small roast for two people. Preheat the oven to 225° C and lightly grease a casserole dish. Remove the white skins from the pork fillet. Heat the lard in a frying pan and brown the fillet of pork all around. Season the pork fillet with pepper and salt, place in the baking dish and bake on the middle shelf for 15 minutes. Allow to rest for a few minutes before slicing. So the meat juice spreads better in the pork fillet.
