These pancakes serve as a basic recipe for classic pancakes, which are spread with jam or served with apple compote. You can also prepare hearty pancakes with bacon, ham or vegetables as you like. For the dough mix flour with milk until smooth. Season with a pinch of salt. Leave to swell for 20 minutes. Stir the eggs into the dough. If you prefer particularly loose pancakes, you can also separate the eggs. Stir in the egg yolk. Beat the egg whites until stiff and fold in. Heat the margarine in portions in a pan. Bake 3 pancakes one after the other. Set the baking temperature to medium. As soon as the surface begins to set, slide the pancake onto a flat plate. Turn around and plunge back into the pan. Bake the pancakes at 50° C in the oven and keep them warm.
