Fried potatoes with egg

Roast potatoes with egg can be served as a side dish with roast meat, fish or poultry or you can prepare a larger quantity as a main course and serve with a fresh salad. Boil firm boiling potatoes unpeeled. Cool in cold water. Peel and cut into coarse cubes. Dice onion and streaky bacon. Heat 10 g butter and lard in a frying pan. Fry bacon until crisp. Add onions. Sauté until translucent. Remove bacon and onions from pan. Heat 10 g butter lard in the pan. Prepare roast potatoes. Season with pepper and salt. Add onions and bacon. Beat eggs in a bowl. Season with salt. Pour the egg over the fried potatoes. Allow to set only briefly so that the egg does not become too dry.
