Broad Beans Potato Salad

For broad bean potato salad, first cook firm boiling potatoes as peel potatoes. Mix light mayonnaise and herb vinegar. Season with pepper, salt and paprika powder. Pour broad beans into a colander. Rinse and drain. Finely dice the onion. Dice tomatoes. Mix broad beans, onions and tomatoes with salad dressing. Place potatoes in cold water to cool more quickly. Peel, cut in half lengthwise and slice. Mix with the salad. Cut leek into fine rolls. Sprinkle over the broad bean and potato salad.
