This pasta dough can easily be kneaded by hand and rolled out with the noodle wood. Mix flour with salt. Stir in the egg with a wooden spoon. Add water. Stir until the water is completely absorbed. Then knead further by hand. If necessary, add more water in small quantities. Finally, the noodle dough should be slightly shiny, relatively firm but elastic. Wrap the pasta dough in foil so that it does not dry out. Leave to rest at room temperature for 30 minutes. Dust worktop with flour. Remove the dough from the foil in portions. Press slightly flat and roll out 2 to 3 mm thin. Cut the dough into the desired shape or cut it out. Cook the pasta in boiling salt water for 2 minutes.
