Paella with pork fillet and scampis

Paella with pork fillet and scampis is a simple variant of paella. Cut pork fillet into medallions. Defrost scampis, rinse and dry. Preheat baking oven to 80° C. Heat the oil in a pan. Brown the pork tenderloin vigorously. Wrap the meat in aluminium foil and keep warm in the oven. Fry the scampis vigorously, wrap in aluminium foil and keep warm in the oven. Finely chop onions and garlic. Sauté in a pan until light. Add the rice and fry until translucent. Deglaze with broth, add saffron, pour on wine and stir. Season with salt and pepper. Cut the peppers into strips and add. Reduce the temperature. Simmer the paella for 20 minutes, stirring occasionally. Clean the beans, halve them, add to boiling water and cook for 10 minutes. Drain the beans and mix into the paella. Cover paella with pork fillet and scampis.
