Avocado Surimi Noodle Salad

Avocado Surimi Noodle Salad is quick and easy to prepare. Put the rigatoni in boiling water, add salt and cook at medium heat for 12 minutes until al dente. Cut half an avocado crosswise into bite-sized slices, as shown in the picture above, and sprinkle with freshly squeezed lemon juice so that they do not run dark in the air. Halve the Surimi Sticks and mix with the avocado. Cut half a yellow pepper into small strips and fold into the surimi sticks. Quarter the radish and mix with the salad. Drain the pasta and pour it into a bowl of cold water to cool it down more quickly. Drain the pasta well and mix into the salad. Mix in salad dressing and yoghurt. Season the noodle salad with white pepper and a pinch of salt. Cut flat parsley into fine strips and sprinkle over avocado surimi noodle salad shortly before serving.
