|2 tbsp||Salad dressing yoghurt|
|1 tbsp||Smooth parsley|
Avocado Surimi Pasta Salad is quick and easy to prepare. Add rigatoni to boiling water, salt and cook on medium heat for 12 minutes until al dente. Cut half an avocado crosswise into bite-sized slices, as shown in the picture above, and drizzle with freshly squeezed lemon juice to prevent them from turning dark when exposed to air. Cut surimi fish sticks in half and mix with the avocado. Cut half a yellow pepper into small strips and fold into the surimi sticks. Quarter the radishes and mix with the salad. Drain the noodles and pour into a bowl of cold water to cool more quickly. Drain pasta well and mix into salad. Mix in the salad dressing yoghurt. Season the pasta salad with white pepper and a pinch of salt. Finely chop the parsley and sprinkle over the avocado surimi pasta salad just before serving.
