Pork fillet with cucumber tomato salad

Pork fillet with cucumber tomato salad is a light summer meal that is low in calories and tastes piquant. The amount of cucumber tomato salad is enough for 2 small salad bowls. I only decorated a small amount on the plate for serving. Peel the cucumber and plane into fine slices. Halve the tomatoes and cut into thin slices. Fill the cucumber tomato salad in a bowl. For the marinade, mix freshly squeezed lemon juice with corn oil and season with ground pepper, salt, paprika powder and finely chopped dill. Pour the marinade over the cucumber tomato salad, mix and leave to stand. Remove the white skin, fat and tendons from the fillet and cut it into slices about 2 fingers thick, as shown in the picture above. Brush a grill pan with corn oil and heat. Brown the pork tenderloin until brown. Turn the meat over and fry vigorously from the other side. Reduce the temperature and fry the pork tenderloin for about 2 minutes while turning again. Season pork fillet with pepper from the mill and salt. Arrange pork fillet with cucumber tomatoes salad on plates and serve with hot or mild Ajvar as desired.
