150 g Book Wheat Flour
250 g Wheat Flour
1 Organic egg
1 tbsp Olive Oil

The dough for book wheat noodles is prepared by hand and for rolling out no noodle machine is necessary. Since Buch Wheat Flour is gluten free and therefore cannot develop gluten, it is mixed with wheat flour. Add a medium organic egg, olive oil, salt and lukewarm water and knead to a smooth dough that should not be sticky. Possibly add a little more flour. If the dough is too dry, add some water. Knead the pasta dough until it begins to shine easily. From the pasta dough always only a small amount at present process and cover the remaining dough with a clean tea towel or an upturned bowl, so that it does not dry out so fast. Roll the pasta dough into long thin rolls of approx. 1 cm diameter. Cut the dough rolls into about two fingers wide pieces and press them flat with your fingers, as shown in the picture above. Book wheat noodles in boiling salted water approx. 5 minutes cook and serve as desired e.g. with tomato sauce or omitted butter and Parmesan.
