Asparagus Toast
Quantity Ingredient
200 g Asparagus
60 g Carrots
2 tbsp Olive Oil
Pepper & Salt
20 g Dried tomatoes in oil
120 g White bread
1 Eggs
2 tbsp Cream
20 g Fresh Parmesan cheese
1 tbsp Basil

This asparagus toast is easily prepared in the pan. Peel the asparagus and cut it diagonally into pieces. Peel the carrot and cut it diagonally into thin oblong slices. Heat 1 tablespoon of oil in a frying pan. Fry the asparagus and carrot for 10 minutes. The asparagus should still be slightly firm to the bite. Season with salt and pepper. Dice the tomatoes and mix in. For the toast, first cut white bread into slightly thicker slices. Whisk egg with cream. Grate the parmesan finely. Stir into the cream. Season with pepper. Shortly before serving, sprinkle finely plucked basil over the vegetables. Heat 1 tablespoon of oil in a frying pan. Turn the toast in the cream. Spread evenly with a knife. Fry the toast on both sides until golden brown. Arrange the asparagus and carrots on the toast.
