Calamari with tomato sauce

Calamares with tomato sauce is a simple but very tasty Mediterranean dish. Cut the tomatoes in half. Cut onion and garlic into fine cubes. Remove the seeds from the olives. Heat the oil in a pan. Sauté onions, add tomatoes and olives and season with garlic. Add the wine and reduce the tomato sauce to a slightly thick consistency. Season the sauce with pepper and fleur de sel. Cut the parsley into strips and sprinkle over the sauce just before serving. Preheat the fryer to 175° C and fry the calamari in two portions for 3 minutes each. Between frying, heat the fat to 175° C again. Drain the calamari and serve with the tomato sauce.
