75 g Margarine
2 Egg Yellow
250 g Wheat Flour Type 405
2 tsp Back Powder
3 tbsp Milk
2 Egg White
1 Pears
30 g Sugar

Fritters with pears are prepared in the deep fryer and taste best warm. A firm variety such as Abate Fetel is particularly suitable as a pear. Preheat the frying fat in the deep fryer to 175°. Pour the soft margarine into the mixing bowl of the food processor and mix with 75 g sugar until frothy. Separate the eggs in two bowls and stir the egg yolk into the margarine. Mix the flour with the baking powder and mix with the margarine at a low heat. Add the milk and stir briefly at the highest speed until smooth. Beat the egg whites until stiff and fold loosely into the dough using a whisk. Peel a larger pear, remove the core and cut the pear into small cubes. Mix the pears with the dough. Cut off the dough with a tablespoon and carefully wipe off with a second tablespoon directly into the hot frying fat. Do not bake more than 3-4 doughnuts at once. Fry the doughnuts with the pears for about 3-4 minutes until they are light golden brown, as shown in the picture above. Remove the doughnuts and pears from the fryer with a skimmer and drain on kitchen paper. Pour the remaining sugar into a deep plate and roll the doughnuts with pears hot in it.
