Baked Sweet Potato

For the baked sweet potato, it is best to use two equally sized sweet potatoes, each weighing 250 g, so that they cook in the oven at the same time. Preheat the oven to 200° or 175° circulating air. Sweet Clean potatoes well under running water and halve lengthwise with a sharp chef's knife. Season the cut surfaces with pepper and salt and sprinkle with grated Emmentaler. Place the sweet potatoes on a baking tray and bake in the middle of the oven for about 30 minutes until done. Meanwhile stir the quark with the milk until smooth and season with pepper, salt, paprika powder and chervil. Clean the spring onions and cut them into fine rings. Put some spring onions aside for decoration, as shown in the picture above. Mix the rest of the spring onions with the quark. Dry the veal escalope with kitchen paper and cut into strips. Heat rapeseed oil in a frying pan and fry the strips of veal escalope at high temperature for a short time. Reduce the temperature to medium and fry the meat for about 3-4 minutes. Then season the veal escalope with pepper and salt. Arrange the baked sweet potatoes with veal escalope and quark on plates and sprinkle with the spring onions set aside.
