Nigiri Sushi with salmon

125 g Sushi rice
0,25 l Water
0,5 tsp Salt
0,5 tsp Sugar
2 tbsp Rice vinegar
100 g Smoked Salmon
Wasabi Paste

Nigiri sushi with salmon is prepared with smoked salmon. Nigiri means to press, because the rice is squeezed by hand to longish rice balls. Fill sushi rice into a sieve and rinse until the water remains clear. Pour the rice into a pot and cover with water. Add salt and sugar, cover with a lid and bring to the boil briefly. Switch temperature to low level. Stir the rice and put the lid back on. Leave Sushi rice to soak for 25 minutes. Distribute on a flat plate for quick cooling. Mix vinegar with a fork. Cut smoked salmon into 6 slightly slanted strips 5 x 3 cm long. Spread salmon thinly with wasabi. Moisten your hands and make 6 long nigiri balls out of the sushi rice. Cover nigiri sushi with salmon, with the wasabi side on top of the rice. The side dishes are pickled ginger and small bowls with soy sauce and wasabi paste for dipping.
