Noodles with salmon cream sauce

Noodles with salmon cream sauce is prepared with smoked salmon. Put Farfalle or bow noodles in boiling salted water and cook for about 10 minutes until al dente. In the meantime, place the pine nuts in a coated pan without adding any fat and roast them light brown while stirring with a wooden spoon until they start to smell. Allow the pine nuts to cool. Peel a small shallot and cut into fine cubes. In a small saucepan or saucepan let out the butter, sauté the shallots lightly in it and deglaze with the vegetable stock. Add the cream and bring to the boil. Stir a slightly heaped teaspoon of starch flour with a little cold water until smooth and bind the cream sauce with it. Turn down the temperature to the lowest setting and season the cream sauce with white pepper. Salt is not required as the vegetable broth and salmon are already spicy enough. Cut smoked salmon into bite-sized strips. Put some strips aside for decoration, as shown in the picture above. Heat the rest of the salmon in the cream sauce and add some of the pine nuts. Pour the pasta into a sieve and drain well. Arrange noodles with salmon cream sauce in deep plates and decorate with the aside strips of salmon. Finely chop the parsley and sprinkle with the remaining pine nuts over the noodles with salmon cream sauce.
