Baked Kohlrabi

Baked Kohlrabi

Baked kohlrabi is served with tender pork fillet in a creamy sauce and is quick and easy to prepare. Preheat the oven to 200°. Quarter the kohlrabi, peel and slice. Pour the kohlrabi into a small saucepan, cover lightly with water, cover with a lid and bring to the boil. Season kohlrabi with a little salt and cook at medium heat for about 8 minutes until al dente. Remove the kohlrabi from the pot with a skimmer and pour into a sieve to drain. Pick up the cooking water from the kohlrabi and use as vegetable broth. Peel a shallot and cut into fine cubes. Cut the pork fillet into slices. Heat the clarified butter in a coated pan. Fry the pork fillet for about 2 minutes under repeated turning with the roast turner and season with pepper from the mill and salt. Remove the fillet of pork from the pan and set aside. Steam the shallots in the dripping until translucent and deglaze with the vegetable stock of kohlrabi. Stir milk with cornflour until smooth and thicken the sauce with it. Season the sauce with a little pepper from the mill and salt. Cut the flat parsley into fine strips and stir into the sauce. Put kohlrabi and pork fillet into a casserole dish and pour the sauce over it, as you can see in the picture above. Sprinkle breadcrumbs over the casserole and spread with butter flakes. Baked kohlrabi is baked in the preheated oven at 200° on the middle rail for approx. 15 minutes.
