Baked herbs Dorade

Baked herbs Dorade is simply prepared in the oven. Preheat baking oven to 225° C. Scale two Dorades, rinse from the inside and outside and pat dry. Season with salt and pepper. Halve the lime lengthwise. Squeeze out one half and sprinkle over the fish. Cut the other half of the lime into slices. Cut the skin of each gilthead several times on both sides. Place 2 thyme twigs, 2 rosemary twigs and bay leaves in the abdominal cavity. Halve the unpeeled garlic cloves and rub into an oiled baking tray. Place the fish on the baking tray and spread the garlic all around. Add 2 rosemary twigs and 2 thyme twigs. Drip oil over the fish. Place the tray on the middle rail in the preheated oven. Cut the remaining herbs into small pieces. After 20 minutes sprinkle the baked herbs with the herbs. Bake baked gilthead for another 5 minutes. Serve baked herb gilthead with lime wedges.
