Asparagus vegetables taste very good as a side dish with chicken or turkey. Peel the asparagus. Cut off the wooden ends. Cut the asparagus into pieces. Put the asparagus vegetables in a saucepan. Cover lightly with water. Add sugar, butter and a pinch of salt. Put the lid on and bring to the boil briefly. Cook asparagus vegetables at medium temperature for 15 minutes. Using a skimmer, lift the asparagus vegetables out of the broth and set aside. Pick up the broth. Pour the milk and starch into a saucepan and stir until smooth. Bring to the boil while stirring. Dilute gradually with 1/8 L broth. Switch temperature to lowest level. Lightly season the sauce with pepper. Pour 2 tbsp. sauce into a small bowl. Whisk with egg yolk. Add back to the sauce and stir in. The sauce must not boil so that the egg yolk does not curdle. Warm the asparagus vegetables in the sauce. Chop the parsley finely and sprinkle over it.
