Black Forest Cherry Crepe

1 Glass Cherries
2 tbsp Food starch
2 tbsp Cherry Water
75 g Wheat Flour Type 405
0,125 l Milk
1 Organic egg
10 g Butter
100 g Cream
1 tsp Vanilla Sugar
50 g Dark chocolate

Black Forest Kirsch Crepe can be served as a dessert or as a coffee drink instead of cake. It is best to prepare the Kirsch Grütze for the filling in good time so that it has enough time to cool down. Pour the cherries from the glass into a sieve and collect the cherry juice. Pour the cherry juice into a small saucepan and bring to the boil. Stir the cornflour with the cherry water until smooth and thicken the cherry juice with it. Remove the saucepan from the heat and mix in the cherries. Pour the Kirsch Grütze into a bowl and leave to cool. Pour the flour into a mixing bowl and stir until smooth with the milk. Add a pinch of salt and stir in a medium sized organic egg. Spread one crepes pan with butter and bake one thin crepe per portion until it begins to brown slightly. Slide the crepe from the pan onto a plate, roll up loosely and allow to cool. Whip cream with vanilla sugar until stiff and fill into a piping bag. Melt the dark chocolate in a water bath. To fill, unroll each crepe, fill with cherry fruit jelly and sprinkle with some cream. Black Forest Kirsch Crepe, as can be seen in the picture above, fold loosely again and drizzle with a little liquid dark chocolate.
