1 tsp Lime peel
1 / 1 bunch Dill
20 g Butter
50 g Trout caviar

Blini rolls with caviar are very easy to prepare, as they taste particularly good well chilled. Blini rolls with caviar not only look decorative on the cold buffet, but are also suitable as finger food at a champagne reception. Since buckwheat flour alone does not have good adhesive properties, it should be mixed with wheat flour. Pour both kinds of flour into a bowl, add mineral water and stir until smooth with a whisk. Stir two eggs into the dough, season with salt and leave to swell for about 30 minutes. Meanwhile, prepare the filling for the Blini rolls with caviar. Place the gelatine in cold water and leave to soak for 10 minutes. Pour the sour cream into a bowl and season with white pepper, a little salt, lime juice and finely grated lime peel. Finely chop the dill and stir into the sour cream. Drain the gelatine, place in a small saucepan and dissolve at a low temperature while stirring. Remove the pot from the heat, mix approx. 3 tablespoons of the sour cream with the gelatine, add to the remaining sour cream and stir until smooth. This prevents the formation of lumps in the gelatine. Put the sour cream in the fridge to set. Heat butter in portions in a coated crepes pan and bake three thin pancakes one after the other. Place the pancakes on a clean tea towel, cover and allow to cool. Stir the sour cream with a whisk and spread on the pancakes so that only the lower two thirds are covered and a wide rim remains free at the top. As can be seen in the picture above, distribute the red trout caviar as long strips on the bottom third, roll up the pancakes and place them on aluminium foil with the seam facing downwards. Seal the pancakes with aluminium foil and cool in the refrigerator for at least 1 hour. Unroll the pancakes and cut them into 2 cm thick Blini rolls with caviar using a sharp chef's knife.
