Flowers Cabbage Cream Soup with Salmon

500 g Flowers cabbage
0,5 l Vegetable broth
0,125 l Milk
0,125 l Cream
4 tsp Starch Flour
Pepper & Salt
Ground nutmeg
2 tsp Lemon juice
1 Egg yolk
200 g Smoked Salmon
0,5 tbsp Dill

Smoked salmon gives this flower cabbage cream soup with salmon its special aroma. Flower cabbage clean and divide into florets. Place the cabbage flowers in a medium stainless steel pot and cover with vegetable stock. Add milk so that the flowers remain cabbage white when cooking. Put on a lid and bring the cabbage flowers to the boil once vigorously. Reduce the temperature to medium and cook the cabbage flowers for about 20 minutes. Remove the pot from the heat and purée the cabbage flowers finely with a hand blender. Stir cream with cornflour until smooth. Bring the flower cabbage cream soup to the boil again briefly and thicken with the mixed starch flour. Turn off the heat and season the flower cabbage cream soup with pepper, salt, nutmeg and lemon juice. Pour some flower cabbage cream soup into a small bowl and whisk with an egg yolk. Mix the flower cabbage cream soup with the mixed egg yolk. Cut the smoked salmon into strips. Put some strips aside to decorate the flower cabbage cream soup with salmon, as shown in the picture above. Heat the remaining smoked salmon lightly in the soup. Pluck some tips of fresh dill. Arrange the flower cabbage cream soup with salmon in soup cups and decorate with the remaining salmon strips and dill tips.
