bear's garlic quark

Bear's garlic quark goes well as a side dish with Pell potatoes, as a dip for grilling and tastes good as a spread on bread. Mix quark, yoghurt and cream. Season with pepper, salt and paprika powder. Cut the shallot into fine cubes. Rinse the wild garlic and dry in a salad spinner. Remove stems and cut leaves into fine strips. Stir the wild garlic and shallot into the quark. Place in the refrigerator covered until serving. The longer the bear's garlic draws quark, the more intensively the aroma unfolds.
