Oriental rice

Oriental rice combines the sweetness of dried fruits with the fruity freshness of oranges. The roasted pistachios and pine nuts give this exotic rice dish a nutty aroma. Oriental rice tastes very good with turkey and chicken. Pour the rice into a small saucepan and cover with lightly salted water. Add a little saffron, cover with a lid and boil the rice once. Leave the rice to swell for about 20 minutes at a low heat. Finely grate the skin of an untreated organic orange. Cut off the rest of the orange peel so that only the juicy flesh of the orange can be seen. Cut the orange fillets into small cubes as shown in the picture above. Collect the orange juice and pour into a bowl. Stir in sherry vinegar and hazelnut oil and season with grated orange peel. Add diced dried apricots and raisins. Roast the pine nuts and green pistachios in a pan without fat until they begin to smell. Mix the cooked rice with the fruits, orange juice, pistachios and pine nuts. Oriental rice is seasoned with fine strips of peppermint leaves shortly before serving.
