Aubergines Beef Goulash

Aubergine beef goulash is stewed in a strong red wine sauce. The aubergines give the sauce a special aroma. Cut beef goulash into smaller cubes. Peel and halve the shallots. Peel garlic and cut into fine slices. Heat the butter lard in a stewing pot. Brown the goulash in portions. Add shallots and garlic. Season with pepper, salt, thyme and bay leaf and cover with a lid. Set the temperature to medium. Cut the eggplants into cubes and add goulash to the beef. Add the wine little by little and put the lid back on. Stew the aubergine beef goulash for 90 minutes. Mix the flour with some cold water and thicken the aubergine beef goulash with it.
