Celery soup with smoked salmon

200 g Celery
100 g Floury boiling potatoes
0,5 l Vegetable broth
2 tbsp Cream
White Pepper
50 g Smoked Salmon
1 tbsp Parsley

Celery soup with smoked salmon is a spicy creamy soup that can be prepared quickly and easily. Peel the celery, cut into small cubes and place in a pot. Peel and wash flour-boiling potatoes, cut into small cubes and add to the celery. Pour in the vegetable stock, cover with a lid and bring the celery soup to the boil once. Lower the temperature to medium and cook the celery soup for minutes. Finely mash the celery soup with a blender and stir in the cream. Season the celery soup with white pepper and possibly a pinch of salt and pour into deep plates. Cut two thin slices of smoked salmon in half lengthwise and twist them together loosely to form four small florets. Decorate celery soup with smoked salmon florets and sprinkle with finely plucked parsley.
