Allgäu sausage salad

The special thing about the Allgäu sausage salad is that the marinade is prepared with a little white beer. The rest of the white beer can be served as a drink with the Allgäu sausage salad. Thinly cut Lyoner meat sausage and sliced Emmentaler with a long chef's knife into narrow longer strips, as shown in the picture above, and put into a salad bowl. Peel and halve a mild white onion, cut into fine slices and mix with the Allgäu sausage salad. Leek onions clean, into fine rings cut and over the sausage salad sprinkle. For the marinade, pour white beer into a bowl, add vegetable stock and fruit vinegar and season the marinade vigorously with ground pepper and a little salt. Round off the marinade with a pinch of sugar and finally stir in the olive oil with a whisk. Mix the marinade with the Allgäu sausage salad and leave to stand for about 30 minutes. Finely chop the parsley and sprinkle it over the sausage salad shortly before serving. Arrange deep plates with one Lollo Bianco leaf each and some tomato pieces and fill up the Allgäu sausage salad. As a side dish a hearty farmer's bread tastes good with the Allgäu sausage salad.
