Greek beef roulades

Greek beef roulades are filled with sheep's cheese and served in Metaxa sauce. Season beef roulades with salt and pepper. Mash the sheep's cheese. Spread over the beef roulades. Sprinkle with dried thyme. Cut black olives in half and remove seeds. Spread half of the olives over them. Roll up Greek beef roulades. Pin with skewers. Heat olive oil in a casserole dish. Fry the Greek beef roulades well all around. Put them on a plate. Cut the vegetables and onion into slices and fry them. Add remaining olives. Press garlic cloves through the garlic press and add. Deglaze with Metaxa. Stir in tomato paste. Add 1/8 l water. Put Greek beef roulades on the onions. Put the lid on. Stew gently for 45 minutes. Turn Greek beef roulades. Stew for another 45 minutes. At the end of the cooking time extend the sauce with 1/8 l water. Serve with rice or Kritharaki noodles.
