Pad Thai Noodles

Pad Thai Noodles

125 g Wide Rice Noodles
125 g Pork fillet
100 g Fresh soya sprouts
60 g Leek Onions
Garlic
0,5 Chilli pod
2 tbsp Peanut Oil
1 tsp Sugar
1 tbsp Lime juice
1 tbsp Ketchup
2 tbsp Fish Sauce
100 g Crabs
1 Organic egg
1 tbsp Fresh coriander

Pad Thai noodles are traditionally prepared in Thailand with pork and shrimps. Each cook varies the other ingredients so that there are many different recipes. Pad Thai noodles are best prepared in a wok. Bring plenty of water to the boil in a medium stainless steel pot. Add the wide rice noodles to the water, reduce the temperature and cook the rice noodles in about 6 minutes until al dente. In order for the wide rice noodles to become slightly crispy during frying, which is typical for this dish, it is important that they are well drained after cooking. Cut the fillet of pork into fine strips with a sharp chef's knife. Place fresh soya bean sprouts in a sieve, rinse thoroughly under running water and drain. Cut leek onions diagonally into slightly wider rings, as shown in the picture above. Peel garlic and cut into fine cubes. Halve a chilli pepper lengthwise and remove the white seeds and skins. Cut half a chilli pepper into fine strips. Heat peanut oil in a wok until it begins to smoke easily. Fry the pork fillet in it for about 2-3 minutes while stirring with the roast turner. Add the garlic and fry briefly, but do not let it brown so that the garlic does not taste bitter. Add the rice noodles to the wok, mix carefully with the pork tenderloin and fry until tender. Sprinkle sugar over the pad Thai noodles, add freshly squeezed lime juice and mix with ketchup. Season the pad Thai noodles with fish sauce and add shrimps. Fresh North Sea prawns taste most aromatic. Whip a fresh organic egg, add to the wok and mix with the pad Thai noodles until the egg is lightly stocked. Fold in the fresh soy sprouts and heat while stirring. Arrange pad Thai noodles on preheated plates and sprinkle with leek onions and strips of chilli pepper. Use some leaves of fresh coriander for decoration. Cut the remaining coriander into fine strips and sprinkle over the pad Thai noodles shortly before serving.
