Cheese Mushroom Spätzle

Cheese mushroom Spätzle is a vegetarian dish that tastes particularly aromatic due to dried stone mushrooms. Cover stone mushrooms with hot water. Leave to swell for 15 minutes. In a saucepan bring plenty of salt water to the boil. Add spaetzle. Cook the spaetzle at medium heat for 12 to 14 minutes. Quarter the mushrooms. Leek onions in pieces cut. Cut the garlic into small cubes. Heat 2 tablespoons of oil in a pan. Brown the mushrooms for 5 minutes. Reduce temperature to medium level. Add the leek, onions and garlic. Season with salt and pepper. Stone mushrooms with soaking water add. Grate cheese finely with the cheese mill. Finely chop the parsley. Pour the mushroom mixture into a bowl. Drain the spaetzle. Heat 1 tbsp oil in the pan. Brown the spaetzle. Add mushrooms. Add the cheese. Sprinkle the cheese mushroom Spätzle with parsley.
