Herb filet with beans Vegetables

Herb fillet with beans vegetables is prepared low in fat and is also suitable for a diet. For seasoning you can also use thyme, rosemary and sage for the herb filet with beans and vegetables instead of herbs from Provence. Wash the potatoes and place them in a small saucepan without peeling. Cover the potatoes with a little water, put a lid on the saucepan and bring the water to the boil. Lower the temperature to medium and cook the boiled potatoes for about 25-30 minutes, depending on the size of the potatoes. The best thing to do is to stick the blade of a small vegetable knife into the thickest part of the potatoes to check whether they are cooked. If the blade simply slides into the middle of the potatoes, they are cooked. Meanwhile brush a larger piece of aluminium foil with 1 teaspoon of olive oil and sprinkle with herbs of Provence. Season pork tenderloin with pepper and salt, place on aluminium foil and wrap firmly in it. It is best to twist the two sides of the aluminium foil firmly together. Bring water to the boil in a soup pot and place the fillet in aluminium foil in the boiling water. Put the lid back on the pot and cook the fillet for about 3 minutes. Then remove the lid and add the tomatoes to the meat in the pot. Remove the soup pot from the heat and leave the fillet to stand together with the tomatoes for about 8 minutes. Meanwhile, clean the green beans, put them in a saucepan and cover with a little water. Peel the garlic cloves and add to the beans together with the savory. Put on a lid and bring the water to the boil. Reduce the temperature to medium and cook the beans in about 10 minutes until al dente. Peel an onion and cut into fine cubes. Heat 1 teaspoon of olive oil in a saucepan and fry the onion cubes until translucent. Drain the cooked beans, add to the onions and season with salt and pepper. Finely chop the parsley. Drain the boiled potatoes, rinse briefly with cold running water and peel. Wrap the herb fillet from the foil and cut into slices. Pour the gravy over the beans. Arrange herb fillet with beans, vegetables and potatoes on plates, as shown in the picture above, and sprinkle with finely chopped parsley.
