Apple Strudel

Apple Strudel

200 g Wheat Flour Type 405
1 Organic egg
1 tbsp Sunflower Oil
4 tbsp Lukewarm water
60 g Raisins
2 tbsp Rum
160 g Butter
80 g Breadcrumbs flour
1,5 kg Apple
100 g Sugar
1 tsp Ground cinnamon
20 g Powder Sugar

For apple strudel, knead flour, egg, a pinch of salt, a tablespoon of oil and so much lukewarm water with oiled hands until a firm dough is obtained. The consistency is reminiscent of homemade pasta dough. Knead the dough for about 15 minutes until it shines silky. Form into a ball, coat with lightly oiled hands, cover with a bowl and let rest for 30 minutes. For the filling of the apple strudel, sprinkle raisins with boiling water, allow to swell a little, pour into a sieve, drain and mix with rum. Heat 40 g butter, fry breadcrumbs in flour and let cool. Peel and quarter the apples and cut them into thin slices. Mix sugar and cinnamon. Sprinkle a thin layer of flour over a tea towel. Place the dough on top and roll out to the size of the cloth. Always roll from the middle to the sides. Powder the backs of your hands, lift the dough and carefully pull it out as thin as possible from the centre to the sides. Cut the ends straight. Preheat the oven to 200° C. Melt 120 g butter. Sprinkle breadcrumbs flour on 2/3 of the dough. Leave an edge of 3 cm free on both sides. The upper third of the dough remains free. Spread the apples on the breadcrumbs, sprinkle with cinnamon sugar and raisins. Brush the upper third of the dough and the sides with a little butter. Put the pages over the apples. Lift the cloth slightly and roll up the apple strudel. Always lift the cloth further. Line a tray with baking paper. Place the apple strudel on top and brush with a little butter. Bake apple strudel on the middle shelf for 40 to 45 minutes. Brush with butter every 10 minutes. Sprinkle the apple strudel with powdered sugar and serve warm. Vanilla sauce or vanilla ice-cream are also delicious.
