Berliner Luft Dessert is an old traditional dessert, which has a particularly airy consistency. Soak gelatine in cold water for 10 minutes. Separate very fresh eggs. Cream egg yolk with 125 g sugar. Add finely grated lemon zest. Stir in lemon juice. Warm the apple juice slightly in a saucepan. Squeeze the gelatine. Dissolve in the apple juice. Leave to cool. Stir apple juice into the egg yolk. Place in the refrigerator for 45 minutes until the cream is slightly firm. Stir again until smooth. Beat the egg white until stiff. Add vanilla sugar. Fold the beaten egg white loosely into the egg yolk. Place the garnish rings on plates. Pour in the Berliner Luft dessert. Place the Berliner Luft dessert in the refrigerator for 1 hour. Put some raspberries aside for decoration. Puree remaining raspberries with 25 g sugar. Pour onto the plates. Loosen and remove garnish rings with a knife. Decorate Berliner Luft with raspberries.
