Chicken in cheese sauce

Chicken in cheese sauce tastes particularly aromatic with spicy gorgonzola. The almond crust keeps the chicken breast fillet juicy while frying. Chicken breast fillet with pepper and salt season. For the breading, pour the flour into a deep plate. Beat an egg in a second plate and whisk with a fork. Pour the almonds into a third plate. Heat the lard in a frying pan. Turn chicken in flour, pull through egg and turn in almonds. Lightly press on the breading and fry the chicken at medium temperature for 4 to 5 minutes on each side. Remove the chicken from the pan and keep warm. Dissolve the roast stock with wine. Add cream and milk and bring to the boil. Remove the rind from the gorgonzola and melt the cheese in the sauce. Season the cheese sauce with nutmeg and pepper. Serve chicken in cheese sauce on preheated plates.
