Tortellini pasta

Tortellini noodles are versatile. Fill wheat flour type 405 in a bowl. Beat the eggs and add. Knead by hand to a firm pasta dough. At first the pasta dough remains dry. Do not add water so that it does not stick in the pasta machine. Knead pasta dough smoothly until it starts to shine. Divide pasta dough into three pieces. Wrap the unused pasta dough in a cloth. Turn through pasta machine first with setting 1. Fold together. Turn again. In between, sprinkle lightly with flour. Repeat the process until the pasta dough runs smoothly through the rollers. Gradually adjust the position of the rollers up to speed 6. For tortellini pasta, first cut out circles 8.5 cm in diameter. Place on a cloth. Cover with a second cloth. Knead the rest of the dough again and roll out. For the filling of the tortellini noodles, season minced meat with pepper, salt, dried oregano and freshly pressed garlic. Form very small balls. You will need 1/2 teaspoon of minced meat per tortellini for the filling. Place ground meat in center of circles. Fold into a half moon, with the edges slightly offset over each other. Press edges down. Twist tortellini noodles into circles. Press ends tightly. Let tortellini noodles dry on a towel for 10 minutes. Boil pasta in salted water for 2 minutes.
