Cheese croquettes

Cheese croquettes are called kaas croquettes in Holland. Prepare the dough in time. To do this, melt butter in a saucepan. Stir in 100 g wheat flour type 405. Slowly add milk while stirring. Grate medium old Gouda cheese. Melt in the sauce. Season with pepper, salt and nutmeg. Spread dough on a flat plate. Allow to cool. For breading, put 20 g of flour in a bowl. In a second bowl, whisk 1 egg. In a third bowl, add breadcrumbs. Preheat deep fryer to 175° C. With lightly floured hands, form 12 cheese croquettes from cheese dough. Dredge cheese croquettes in flour, drag through egg and coat in breadcrumbs. Fry cheese croquettes in batches for 3 to 4 minutes until floating.
