For Apfel Küchle it is best to use a slightly sour apple variety such as Boskop. In order for the apple cakes to become tender during frying and taste similar to apple puree or apple compote, they are marinated before baking. Peel and slice the apples and remove the core with an apple cutter. Place apple slices in a baking dish. Mix the finely grated orange peel of an untreated organic orange with sugar and squeezed orange juice and pour over the apple slices. For the apple cake batter, fill half of the flour in a bowl and set aside. Mix a medium organic egg in a mixing bowl with a hand mixer until creamy, sprinkle with the remaining flour and stir in. Stir 2 tablespoons of the marinade into the dough. Beat the egg whites until stiff and fold into the batter. Heat the deep fryer to 180°. Drain the Apfel Küchle on kitchen paper, turn in the flour put aside and pull through the baking dough. Fry the apple kitchen in portions for approx. 3-4 minutes.
